Jambalaya

Serves 20 and fills a large roasting pan

  • 8 cups rice
  • 10 cups water

Bring rice and water to a boil and turn off heat. Let stand.

  • 3 cups – onions – chopped
  • 2          – green peppers – chopped
  • 3 cups – celery – chopped
  • 2 TBSP – butter
  • 1 TBSP – salt
  • 1 ½ tsp – pepper

Saute in batches with butter for 2 minutes to soften.  Add to roasting pan and stir in salt and pepper.

  • 3 bunches – green onions – chopped, greens and whites
  • 1/4 cup – parsley – chopped
  • 1/2 head garlic – chopped
  • 1 TBSP – butter

Saute with butter.  Add to roasting pan.

  • 8          – chicken breasts – cubed
  • 2 TBSP – garlic powder
  • 1 tsp – cayenne
  • 2 TBSP – cooking oil

Mix cayenne and garlic powder and sprinkle mixture over chicken.  Brown with cooking oil and add to roasting pan.

  • 3 chicken bullion cubes – dissolved in 4 cups water
  • 1 can, 28 oz – diced tomatoes
  • 3 lbs – kielbasa – ½ slices
  • 2 cups – water

Add all ingredients into roasting pan and mix together.  Cover and place in oven for 1 hour at 350 degrees.
