Corn Salsa

Serve with non-beef tacos

  • 3 ears corn – sliced off cob
  • 1 can (13.5 oz) – Black Beans – drained
  • 4 TBSP – red onion, chopped
  • 1– Red Pepper, chopped
  • 2 cloves – garlic, minced
  • 1 TBSP – Olive Oil
  • 2– jalapenoes, finely chopped
  • 1 – Avocado, large diced
  • 1 – lime, juiced (approx 2 TBSP)

Combine all ingredients except avocado & lime juice in a bowl.  In a separate bowl, stir together the avocado and lime juice and blend into the other ingredients.
