Serve with non-beef tacos
- 3 ears corn – sliced off cob
- 1 can (13.5 oz) – Black Beans – drained
- 4 TBSP – red onion, chopped
- 1– Red Pepper, chopped
- 2 cloves – garlic, minced
- 1 TBSP – Olive Oil
- 2– jalapenoes, finely chopped
- 1 – Avocado, large diced
- 1 – lime, juiced (approx 2 TBSP)
Combine all ingredients except avocado & lime juice in a bowl. In a separate bowl, stir together the avocado and lime juice and blend into the other ingredients.
