Cajun-Garlic Oven Potatoes

Serves 5 or 6

  • 4 lbs – medium red skinned potatoes
  • 1/2 cup – olive oil (estimated)
  • 5 to 6 cloves  – garlic, finely chopped
  • Salt and Pepper – to taste

Preheat oven to 450°F.  Spray oven pan with light oil – foil covering the pan can make later cleanup easier.

Add garlic to olive oil and stir.

Wash dirt off potatoes.  Slice each potato into 1/8”-1/4″ wedes.  Place Potatoes in large bowl and add garlic-olive oil to thinly coat potatoes while stirring with hands.  Place in one layer on oven pan and sprinkle salt and pepper to taste.  Cook in oven for approximately 20 minutes or until potatoes are tender with crispy skins.
