Chipotle Chili

Serves 8-10

  • 2 lbs – Ground Chuck
  • 1 lb – Ground Pork
  • 2 lrg Onions – chopped
  • 2x 18oz Cans – Diced Tomatoes
  • 1x 18oz Can – water (rinse water from tomato cans)
  • 4 cloves – Garlic, minced
  • 5 Tbsp – Chipotle Chili Powder
  • 5 Tbsp – Cumin Powder
  • 1 Tbsp – Salt
  • 1 tsp – Black Pepper
  • 1/2 oz – Unsweetened Dark Chocolate, shaved
  • 12 oz – Beer
  • 1 1/2 tsp – cider vinegar (to taste)
  • 1 lb – elbow macaroni (optional), cooked
  • 1 cup – sour cream (optional)
  • 2 cups – shredded Cheddar Cheese

In a large sauce (4.5 Qt) pan over medium-high heat, brown the ground chuck & pork until no longer pink.  Strain and discard any excess grease and return to the pan.  Over medium heat, add the onions and continue the browning process until the onions are translucent.  Add the canned tomatoes, garlic, water, and beer.  Then add the remaining spices and chocolate to the mixture and bring to a boil.  Add more salt or pepper to taste.  Simmer for 45 minutes (minimum; 2 1/2 hrs+ = better) before serving.
