- 1/2 cup butter
- 1 1/2 cups sugar
- 2 cups flour
- 1 tspn baking soda
- 1 tspn baking powder
- 1/2 tspn salt
- 1/4 tspn cinnamon
- 1/4 tspn nutmeg
- 3 very ripe bananas, mashed
- 1/4 cup half & half cream
- 2 eggs
- 1 cup chopped pecans ( use pieces or halves and chop for best flavor )
Preheat oven to 350° F. Grease with shortening, 2 mini loaf pans
With a mixer, cream butter and sugar in a large bowl. Add eggs, one at a time. Beat well.
Mix dry ingredients in a separate bowl. In a 3rd bowl, add half & half to the mashed bananas and stir.
Alternately, add the dry ingredients and banana mash to the creamed butter mixture and stir with a spoon to blend. Do not over mix. Fold in the nuts and pour into greased mini loaf pans. Move the batter to the edges to form a shallow well in the loaf centers (to prevent peaking during baking). Bake for 45- 50 minutes. Let cool in pan on baking rack for 10 minutes before removing.
