Chicken Thighs – Korean style

Marinade Time: 4 hrs – overnight; Cook Time:30 minutess

  • Marinade
  • 4 1/2 TBSP – gochujang chili paste
  • 1 1/2 TBSP – grated ginger
  • 3 TBSP – soy sauce
  • 3 TBSP – sesame oil
  • Korean Chicken
  • 1 pound – chicken thighs, boneless, skinless – cut into 3/4-1” strips
  • 1 1/2 TBSP – garlic, finely chopped
  • 4-5 green onions, chopped – greens and whites
  • 1 lemon’s zest
  • 5 oz – snow peas or peas (optional)
  • 5 oz – baby corn, halved and blanched (optional)

Instructions:

Marinade: Mix the sesame oil, gochujong, soy sauce, and ginger.  Marinate and refrigerate the chicken with 1 1/2 TBSP of the oil mixture for 4 hrs or overnight.  Save the remainder of the marinade for later.

Once chicken is marinaded – in a wide frying pan over medium heat, heat the remaining marinade  and add the garlic.

Once fragrant, add the green onions and fry until softened – about 1-2 minutes .Then add the marinated chicken and continue cooking until chicken is almost done – about 12-15 minutes.

Add the optional baby corn and snow peas and cook for another 5 minutes until chicken is finished.  Remove from stovetop, mix in the lemon zest.
