Serves 8, roughly 500 calories per meal
Ingredients
- white onion, chopped finely
- frozen mixed veggies (carrots, corn, greenbeans) 32 oz
- lean ground beef 1lb
- potatoes 5 lbs
- 2 garlic cloves, minced
- butter 1 stick
- whole 1 cup
- minors beef broth concentrate (1 tbsp)
- tomato paste 1 tbsp
- salt/pepper
- italian seasoning
- corn starch to thicken (1/4 cup)
Directions:
- Peel and chop potatoes finely, boil until mashable
- Brown ground beef with onions and garlic.
- Once beef and onions are browned, add in the frozen vegetables, minors beef broth concentrate, and about 3 cups of water (if you want less gravy add in 2 cups). Bring to a boil.
- Add in tomato paste, Italian seasoning, and salt and pepper to taste.
- Make a corn starch slurry (1/4 cup corn starch, 1 cup cold water). Add to meat mixture once boiling, allow the gravy to thicken.
- Make your mashed potatoes. I usually use 1 stick butter, 5 lbs potatoes, and eyeball the milk (maybe 2 cups?) until it is the consistency that I want. Salt and pepper to taste.
- Preheat oven to 375
- Using a bake safe dish put meat mixture down first and spread out evenly. Then top with mashed potatoes.
- Bake in oven for 20 minutes. Eat!
