Fajita Marinades

  • I. – Preferred
  • 1 clove – garlic, minced
  • 1 1/2 tspn – salt
  • 1 1/2 tspn – ground Cumin
  • 1/2  tspn – chili powder
  • 1/2 tspn – red pepper flakes
  • 1 TBSP – Olive Oil
  • 2 TBSP – lime juice (about 1 lime)
  • 1 1/2 lbs – sliced meat – chicken or beef
  • II.
  • 4 TBSP – Canola Oil
  • 2 TBSP – Lemon Juice (about 1/2 lemon)
  • 1 1/2 tspn – Lawry’s Seasoned Salt
  • 1 1/2 tspn – Oregano
  • 1 1/2 tspn – ground Cumin
  • 1 tspn – Garlic Powder
  • 1/2 tspn – Chili Powder
  • 1/2 tspn – Paprika
  • 1/2 tspn – red pepper flakes
  • 1 1/2 lbs – sliced meat – chicken or beef

All of these work for chicken or beef or pork.  Add a little sugar or honey with shish-kabob.  Marinate as little as an hour, but for best flavor longer is better.  Overnight for chicken thighs and legs.
