Serves 20 and fills a large roasting pan
- 8 cups rice
- 10 cups water
Bring rice and water to a boil and turn off heat. Let stand.
- 3 cups – onions – chopped
- 2 – green peppers – chopped
- 3 cups – celery – chopped
- 2 TBSP – butter
- 1 TBSP – salt
- 1 ½ tsp – pepper
Saute in batches with butter for 2 minutes to soften. Add to roasting pan and stir in salt and pepper.
- 3 bunches – green onions – chopped, greens and whites
- 1/4 cup – parsley – chopped
- 1/2 head garlic – chopped
- 1 TBSP – butter
Saute with butter. Add to roasting pan.
- 8 – chicken breasts – cubed
- 2 TBSP – garlic powder
- 1 tsp – cayenne
- 2 TBSP – cooking oil
Mix cayenne and garlic powder and sprinkle mixture over chicken. Brown with cooking oil and add to roasting pan.
- 3 chicken bullion cubes – dissolved in 4 cups water
- 1 can, 28 oz – diced tomatoes
- 3 lbs – kielbasa – ½ slices
- 2 cups – water
Add all ingredients into roasting pan and mix together. Cover and place in oven for 1 hour at 350 degrees.
