This can be made as main dish or leave out the kielbasa to use as a side. Experiment with other vegetables.
Makes 6 servings. Total time ~1 hour.
Ingredients
Vinaigrette
- 1/2 cup olive oil
- 2.5 tbsp red wine vinegar
- 2 tsp coarse mustard
- 1/2 tsp garlic powder
- 1/2 tsp dried oregano
- 1 tsp paprika
- 1/2 tsp salt
- black pepper to taste
Sausage and Veggies
- 2 packages of kielbasa
- 1 large (or two small) zucchinis
- 2 bell peppers
- 1 red onion
- 1 bag fingerling potatoes
- 2 cups uncooked rice
Instructions
- Preheat oven to 400F.
- Line two baking sheets with parchment paper.
- Mix vinaigrette ingredients in a small mixing bowl. Set aside.
- Slice kielbasa into medallions.
- Chop vegetables into bite-sized pieces (roughly 0.5 in x 1 in).
- Put kielbasa and vegetables in a large mixing bowl. Coat with about half of the vinaigrette.
- Spread kielbasa and vegetables evenly on baking trays.
- Bake for 15 min.
- Start rice.
- Flip sausage and vegetables. Bake another 15 min.
- Depending on desired crispiness, bake another 5-10 min at a higher temp or broil.
- Coat kielbasa and vegetables with remaining vinaigrette.
- Serve with rice.
