Kielbasa and Roasted Vegetables

This can be made as main dish or leave out the kielbasa to use as a side. Experiment with other vegetables.

Makes 6 servings. Total time ~1 hour.

Ingredients

Vinaigrette

  • 1/2 cup olive oil
  • 2.5 tbsp red wine vinegar
  • 2 tsp coarse mustard
  • 1/2 tsp garlic powder
  • 1/2 tsp dried oregano
  • 1 tsp paprika
  • 1/2 tsp salt
  • black pepper to taste

Sausage and Veggies

  • 2 packages of kielbasa
  • 1 large (or two small) zucchinis
  • 2 bell peppers
  • 1 red onion
  • 1 bag fingerling potatoes
  • 2 cups uncooked rice

Instructions

  1. Preheat oven to 400F.
  2. Line two baking sheets with parchment paper.
  3. Mix vinaigrette ingredients in a small mixing bowl. Set aside.
  4. Slice kielbasa into medallions.
  5. Chop vegetables into bite-sized pieces (roughly 0.5 in x 1 in).
  6. Put kielbasa and vegetables in a large mixing bowl. Coat with about half of the vinaigrette.
  7. Spread kielbasa and vegetables evenly on baking trays.
  8. Bake for 15 min.
  9. Start rice.
  10. Flip sausage and vegetables. Bake another 15 min.
  11. Depending on desired crispiness, bake another 5-10 min at a higher temp or broil.
  12. Coat kielbasa and vegetables with remaining vinaigrette.
  13. Serve with rice.
